2018 was a warm and dry vintage where we saw beautiful ripening with lovely physiological maturity. Clone 4, clone 6, and clone 8 Cabernet Sauvignon, and clone 400 of Petit Verdot were thinned to ensure even ripening. The crop yields ranged from 1.5 tons to 2.4 tons per acre. Our efforts toward sustainable wine growing begun in 2004 have improved the grapes and wine from Woodward Canyon Estate Vineyard.

Tasting Notes
This wine is dark red in color with enticing aromas of Christmas fruit cake, and notes of graham. An elegant but firm mouth feel begins with plum, herbs, and a slight olive character that finishes with baking spice and graphite/pencil. The smooth tannins and oak integrate beautifully with generous fruit.

Woodward Canyon Estate Vineyard, Certified Sustainable by IOBC via LIVE. Additionally, the vineyard and resulting wine are also certified as Salmon Safe.
Production Notes
All grapes were harvested by hand and sorted prior to crushing. This wine was fermented in 2000 liter stainless steel tanks and gently punched down twice a day. After pressing and settling, this wine went directly to French chateau barrels for additional aging and maturation.

Pair with mac and cheese with Brussels sprouts or a cheese course with Beechers and Humbolt Fog.
