This grape is reminiscent of the lovely Dolcetto wines that thrive in Italy’s Dogliani region. This wine has a beautiful dark garnet color and fruit driven nose of mature Walla Walla red plums. Flavors of black fruits and subtle spices carry through in the mouth. This wine is lean with a finish that is long, generous and well balanced. With proper storage, this wine should age well for 5 years from vintage.
Dolcetto is typically the first red wine grape of the vintage to be harvested at Woodward Canyon. This wine was fermented in a 2000 liter stainless steel tank and was punched down twice a day. After pressing, the wine was transferred to older French oak barrels to complete primary fermentation. Malolactic fermentation was not allowed to occur in our very cold cellar. After aging, the wine was racked from barrel and bottled in the early 2020.
Food Pairing Notes
This wine is produced with pizza, calzones, and pasta in mind and should be enjoyed at cool cellar temperature. BBQ season has officially begun, this wine also shows beautifully with anything off the grill, get outdoors and enjoy!
Reflecting the warmer 2018 growing season, this new Estate Dolcetto is beautifully proportioned with gorgeous fruit and is perfectly structured. Harvested at 2.1 tons per acre, the tannins are mature and integrated due to ideal physiological ripeness.
