Tasting Notes
This wine has enticing aromas of earth, cigar box and ripe black olive; notes of toasted coconut integrate perfectly with generous yet firm dried black fruits. A silky mouth feel begins with ripe black fruits leading towards a chocolate-mocha finish that is exotic, generous and long. The wine offers firm structure yet shows beautiful proportion and style. While one could enjoy this wine now it will benefit from additional cellaring and should continue to develop for ten years or more with proper storage.
Vineyard Notes
Woodward Canyon Estate Vineyard Established in 1976, Woodward Canyon is currently the western most vineyard in Walla Walla Valley AVA, roughly 15 miles west of Walla Walla Washington. The 41 vineyard acres planted and several more acres of green belts support native species such as western juniper, ponderosa pine, western sage brush, arrow leaf balsam root, and perennial wild-flowers. Ritzville silt loam over fractured basalt, slope 15-18%. 750-850ft elevation. Managed by Woodward Canyon Winery.
Production Notes
Our oldest block cabernet sauvignon, grown on shallow basalt terraces, was thinned to one cluster per shoot; the average yield was less than 2 tons per acre. Our efforts toward sustainable wine growing begun in 2004 are clearly improving the grapes and wine from the Woodward Canyon Estate Vineyard. All grapes were harvested by hand and sorted prior to crushing. This red wine was fermented with native yeast in one very small tank; it was punched down two times per day. After pressing and settling, this wine went directly to new French chateau barrels for additional aging and maturation. This is the 4th vintage of “old vine” Walla Walla Valley cabernet sauvignon.
