Wine Profile
Tasting Notes
This enticing and deeply colored red wine shows a complex nose of baking spice, black olive and graham integrated beautifully with aromas of ripe black fruits. In the mouth the wine is rich and elegant, showing subtle notes of herb and black berry. Integrated tannins enhance the texture and give proportion; the finish is complex, generous, and long. While this wine can be enjoyed now it will benefit greatly from additional cellaring and, with proper storage, should develop for ten years or more.
Ratings
91+ POINTS Vinous, (mostly made from Champoux and the estate vineyard; aged in 50% new oak): Saturated ruby. Sexy nose combines cassis, crushed-stone minerality, tobacco leaf, dark chocolate and menthol. Alluringly sweet, plush flavors of cassis, plum, dark raspberry, spices, licorice, dark chocolate and glossy oak are complicated by slightly medicinal notes of kirsch, menthol and herbs. Offers noteworthy density and depth and finishes with rather powerful broad, dusty tannins. Winemaker Mott kept this in barrel for 28 months, compared to a normal 22. There's plenty of mid-palate energy and thickness here, but I find all these wines quite oaky and a bit herbal. Mott told me he generally likes them best five to seven years after the vintage, but this rather chunky wine will more like seven to ten years to assume its adult shape. He also noted that "more people age our Old Vines Cabernet Sauvignon." Plush, menthol, cassis, kirsch and dark chocolate. A bit obvious, chunky? -Stephen Tanzer

Production Notes
The 2015 vintage was smaller and slightly warmer than 2014, yet at the same time gave impressive quality. Beautifully mature fruit was achieved through rigorous shoot thinning, leaf stripping and green harvesting. All grapes were harvested by hand, sorted and de-stemmed. This Cabernet Sauvignon was fermented in small stainless steel tanks and was punched down or pumped over twice a day. Aging in French Chateaux barrels for twenty-two months has produced a well-proportioned, complex and generous red wine. We have consciously chosen to use slightly less new French oak as these vineyards have gotten older; thus allowing the wine to express true varietal character and distinct sense of place.
